It is now 9:20 PM, and I am drinking my last quart of juice for the day. As I said above, one of the challenges for me is spacing out my juice so I am having a quart every 2-3 hours earlier in the day. I am considering getting pint jars, as I sometimes feel uncomfortable after a full quart. Then, of course, I will need to have a pint every hour or two.
Tomorrow is coop day . . . our local organic produce coop. I am a hostess for one of the drop off points, and normally help sort at the main site. Due to my recent surgery, I can't do it this time - but my husband is driving to deliver food for me. He wants me to go along, so we will be leaving the house at 6:30 AM. I didn't feel like getting up early enough to make juice in the morning, so I just completed my second juicing session for the day. As I go to sleep this evening I have the following juices ready for tomorrow:
3 quarts: green leaf lettuce, celery, tomato, a few little peppers, 1 scallion, and 1 lemon
1 pint: pomegranate
1 pint: apple with a touch of lemon (because I don't think my husband will drink his share from today. I LOVED it and was raving about how good it was. He took a swallow and made quite the face. He thought it was a bit tart.)
Basically that means I will only have to juice another pound of greens for tomorrow, plus whatever I need to flavor it up a bit. I prefer not to make too much ahead of time, as it is better fresh. But in this situation, I knew I would be setting myself up for failure if I was not prepared in the morning.
